Oatmeal Meat Substitute recipe

This is a great tasting meat alternative. . .I buy the oatmeal in the large container at Aldi's. . . and it's a very cost effective meal. With our expenses skyrocketing, I need every low cost recipe I can find and tolerate.


1 cup rolled oats (long cooking oatmeal),

1/2 teaspoon salt,

1/2 teaspoon sage,

2 eggs beaten,

2 tablespoons butter [margarine can be substituted for butter],

1 beef bouillon cube.

Mix the oats, salt, sage and eggs; form into four flat patties. Fry in the butter until browned on both sides.

In a kettle or saucepan, boil 1 qt. water and add bouillon cube.

Pour mixture over patties; simmer, covered for 30 minutes.

Where's the Calgon?

Mom's in ICU -- had to start dialysis today. . . can't get her off the vent, can't keep her BP up, etc.

I've been eating poorly, not sleeping well, not exercising at all. . . Gotta figure out a better way to cope/deal with all this.

In the meantime. . . we've been spending WAY too much money on fast food, etc. So, we have to meal plan, and plan stuff to eat on the run, or at the hospital. . .

I have been crocheting with free yarns, that were given to me a while back by a lovely online friend.

Well. . .

Been a wild day. . . got my feelings hurt by some online people. . . had a harried day with my mom and trying to get her to the doctor, when I was working, etc.

Most of my frugal plans went out the window for today, although we kept to our meals at home, etc. . . Marty had to make multiple trips to Springfield, etc.

Well, back to hard core frugality

so we came home, under budget for the SC trip. . . the money that we had left over, will cover dd's summer college tuition. I sold 40 hours of vacation , and that will cover her fall tuition. She pays for her books, fees, etc.

Now, to start saving for :

dh and I new glasses and dd new contacts. . . my insurance will pay a bit, but not nearly all of the cost.

repair to the van latch on the back - we broke it while on vaccation

paint for the outside of the house.


all relatively expensive items, so hardcore frugality is in order. Il is going to increase our income taxes by 50%, as well as increase the gas tax, license fees, and now are going to add taxes to some food items (what they consider junk foods)

So -- I made a batch of homemade laundry detergent the other day, and we've started using that. . . will be making homemade waffles for dd's breakfasts (she's a waffle fanatic) and curbing pretty much all unnecessary spending.

Back from SC -- trip was very nice. . .and so glad to see Doug, Brenda and Lily. We even managed to come home with some cash, enough to cover Deana's summer tuition.
